A preliminary review of the drawings and specifications of the above mentioned project has been
conducted by the Hamilton County Health Department. The items submitted are within the
requirements of the Indiana State Department of Health Rule 410 LAC 7-24 Retail Food Store
Sanitations Requirements and the Hamilton County Food Establishment Ordinance 12-13.04-C.
Prior to beginning operations in the new facility, please notify the Department of the expected
opening date so that two (2) inspections (pre -opening and opening) by a representative of this
department may be arranged. For the pre -opening inspection, the following items must be
completed prior to inspection:
> All major construction must be completed
> All cold -holding equipment must have a thermometer, be turned on and maintaining proper
temperature
> Hot and cold running water must be provided throughout the establishment
> Sanitizer with appropriate test strips must be provided and all ware washing equipment (dish
machine and/or three compartment sink) must be functioning
> Hand sinks must be functioning with hand soap and hand drying provisions (ex. paper
towels)
If the above items are not completed by the time of the pre -opening inspection, an inspection will
not be performed. In addition to the above, the facility should be thoroughly cleaned to remove
dust and debris. After the final inspection is complete, the license fee must be paid at the Health
Department prior to opening of the establishment for operation.
