Dear All:
The grease trap at Anthony’s Chophouse, ( Monon and Main LLC Project) was oversized to
accommodate future connectors from the office portion of the project if required.
This action was similar to the sizing of storm water flow and additional tenant use if in fact
the entire development was eventually occupied.
Currently our statistics indicate that our grease program is causing even less flow and
required pumping that we initially anticipated, in that regard there is quite an abundance of
availability should another restaurant tap into the current system, Even though there was
much additional capacity planned anyway.
We acknowledge that SAVOR Restaurant would like to tap into the grease trap at the site and
grant any permission that might be required to accommodate the request.
