After we got off the phone, I spoke with Aaron Hoover, at Carmel Utilities, briefly and he thought an under-the-sink
grease interceptor would work for our application. Metro Construction is committed to installing an under- the-sink
grease interceptor in the "When Eddie Met Salad" retail space despite being absent in the construction
